Man, Pork Chops have got to be the most temperamental meat I've worked with! This next recipe has literally been years in the making. Let me explain. When I was younger I wanted to love Pork Chops. I really did. But every time I tried them, they're were a bit too tough for me. And if I have to fight to eat my meat, it starts to mentally freak me out. Call me crazy but I'm a tender-and-juicy-meat-kind-of-girl. So, then I tried buying the skinnier cuts of pork chops thinking that that would be the solution. I tried frying them, baking them and now- one of my favorite new recipes! And yes, the slow cooker has once again saved the day! This recipe is based on some amazing pork chops a friend baked for me once. And though I don't have that recipe, this one incorporates the same tenderness & taste. You're going to love it. My absolute favorite part is the gravy! I'm pretty proud of it. I invented it from scratch. Seriously my husband is usually the go-to sauce man. He can make gravy to cry over. My gravy usually makes people cry but for a different reason. ;) I'm just teasing. But I am getting better for sure. But this gravy- it got me the "restaurant worthy" approval from my husband. Store leftovers in an airtight container in the fridge for up to 3 days. *Note: Just a heads up- the gravy will be pretty white in color when you first combine it but it will brown slightly as it simmers in the crockpot. This next recipe is got to be the most delicious way to eat your oatmeal. I have a hard time eating just Oatmeal in the morning. I know it's nutritious and I usually do turn to it if I need something quick and easy to prepare. But what if I told you you could have the wonderful ingredients of oatmeal plus more nutrients in a waffle form? It's true. Introducing Oat Flour Waffles. They're delicious and easy. I simply throw all of the ingredients in my blender and then cook them up! They have a light flavor and a bendable quality so they work great as a sandwich bread as well. Do oats burn through you quickly? Don't worry. These Oat Waffles pack extra protein with the eggs and extra fiber with the coconut flour. Actually...did you know that coconut flour is actually low in digestible carbohydrates? That means that it will burn slowly in your body giving you a longer lasting breakfast. Did you know that you can make your very own?! Let's start at the beginning... Popcorn was always a staple for me. Even through my college life. There was nothing better than popping (Um, no pun intended...) a little bag into the microwave and then minutes later devouring the wonderful buttery, salty joy. As I would unwrap the popcorn bag from it's sealed plastic packaging, before placing it into the microwave to cook, I used to imagine that there was this “secret ingredient” that the popcorn makers skillfully put into their bags in order for the kernels to pop. I even thought maybe it's the kernels! Special grown microwaveable kernels. Boy was I wrong. It's just the stinkin' microvawe! Would you believe that you can pop up beautiful microwave popcorn yourself...with just a bag...and NOTHING else other than the microwave! No butter, no salt. Just a bag! Seriously. Blew my mind. I swear it's like one of the nation's best kept secrets since aliens starting visiting our planet... (I'm just teasing, I don't believe in aliens or their visitations.) But seriously. Super cool you can pop corn without a stove or hot air popper. Now, as I often like to do, I want to educate you just a little about why this next recipe is super important. It's not just a great concept but it's one that you should highly consider switching too if you're still using store bought popcorn. There are some super great articles on it that I want you to read but basically most store bought microwaveable popcorn brands put a chemical into their popcorn bags that is linked to cancer and infertility to name a few! There's also the factor of the word “natural flavors” which can mean anything that once came from nature-which isn't bad itself but under FDA law...even if it's a chemical created by man from an ingredient that once came from nature it can be labeled “natural.” Don't believe me? Bottom line, if you have to use a microwave to cook your popcorn, make it from scratch! Know what's being put into your food, use simple ingredients and when possible, make it yourself. It will be A LOT healthier for you! Enjoy ;) How to make your own Microwavable PopcornPlace the bag into your microwave and cook for around 3 minutes. (It will probably pop closer to 2 minutes but you'll want to give yourself some extra time just in case.) You will know the popcorn is done when the kernels slow down popping. (Just as you would with standard microwavable popcorn.) *See note below. *NOTE: If not all of your kernels pop up- you can stick the HOT kernels back into the sack and return them to the microwave to continue popping. Just be sure the popped kernels are removed or else they will burn.

I am loving this next recipe. Coconut and chicken is like a match made in heaven. And this next recipe, is surely no exception! Not only is this chicken rolled in coconut flakes but in coconut flour and coconut milk as well!!! It's a delicious combination your entire family will sure to love! *You may need more or less depending on your rolling. Why coconut flour you may ask? It's super high in fiber and a great source of iron. AND by using it, it makes this dish Grain Free! I thought it was only fitting to have my little "snack-attacker" introduce this next gluten free recipe to you. She is the queen of snacks. In fact, it's the first thing she asks for when she wakes up in the morning: "Mom, mom! Can I have a snack..." She usually turns her lip down when I explain we eat breakfast for breakfast and not snacks. ;) So, in honor of her (and her gluten and dairy allergies) I wanted a good healthy snack that I wouldn't feel guilty giving her but one that also provides her with a good mix of protein and nutrients. I created this from our favorite nuts and dried fruits but feel free to adjust it to your needs. Allergic to peanuts? No problem. Simply sub them out for a different nut. If you haven't already tried it, making your own trail mix is so incredibly easy! In fact, I let my 3 year do the entire thing! I'm super excited to introduce to you a new gluten free waffle recipe to you! Don't get me wrong, we certainly love our old favorite waffles for sure but this recipe offers some unique qualities. These waffles are super light and fluffy and hold together very well! They are even bendable for a great sandwich bread. Sorghum is one of the cheaper gluten free flours but it is also packed with great nutrients. It's slow to digest meaning it's low on the glycemic scale making it great for diabetics. It's high in protein and antioxidants but has a pleasantly mild taste that reminds me a little of wheat flour. I think you'll love them! ;) Enjoy. I'm always looking for new ways to use up my over ripe bananas and this next recipe is my absolute NEW favorite. It staprted out as an experiment with high hopes but as I watched my yummy brown sugar and walnut streusel sink into the depths of the pan I thought it had completely flopped, but then after tasting it, it was actually perfectly addicting and delicious. It was a roller coaster of a recipe I guess. ;) The top has a slightly crisp crust and the base has a yummy caramel hint of a flavor. It reminds me of a cake I used to eat before I was gluten free called Yummy Sticky Happy Pudding. (You might know it as Sticky Date Pudding.) It's a delicious English dessert. My sister in law thought it tastes like a banana coffee cake. Whatever you want to compare it to, it's delicious! The cake is sweet by itself & doesn't really need frosting but if you prefer to top it my cream cheese frosting works great. Enjoy!
