Then comes marriage...I first met Brandon when I was only 18 years old at my first semester of college. He was the "hot guy" dating my roommate. I didn't think much of him at the time but when we re-met 9 years after that, things clicked fast! In fact, I did not even know that Brandon was a DOCTOR at all until he met my parents! Talk about a shock. Seems he didn't want girls to fall in love with him for the wrong reason. (Now, in my defense, he was doing business and finance at the time.) Because we knew each other before, it was easy to take the next step and we married in 2007.
We decided right away that we wanted children but my body was just not cooperating. Brandon's brother, Jared, is also a holistic doctor and told me to follow a Gluten-Free diet for 6 months. I was pretty sure he hated me and wanted me to be miserable! Why else would he have me do that?!? What a mean thing to have someone do! Maybe some of you have felt this way. I was perfectly happy eating my gluten infested goodies and getting my typical bloated stomach...or was I? Though it was one of the hardest things I've had to do, I survived 6 months of a strict gluten-free diet and the result is I felt a whole lot better, I lost 10 lbs, and my body could heal.
It's been so helpful to be married to my knowledgeable husband and changing our eating has been a blessing to our family. We eat more healthy and now we're able to share it with YOU through this website.

Our Food Philosophy:
Does your family have a food philosophy? Ours sure does! And over the years it has certainly changed. We started our marriage out eating like other typical Americans. Our meals came from cans and boxes, bread with gluten, quick fix & prepackaged delights. Once I discovered my body couldn't handle wheat, things have certainly changed. My husband is defiantly blessed to be in the profession he is in. He is constantly learning, going to seminars, and receiving the latest studies on health. The more we learn, the more we have continually changed the way we eat. Where are we now? Below are some of our ideals:
- We cook meals from scratch (we can control the ingredients, there's no preservatives, and they just taste better).
- We avoid gluten and most dairy.
- We avoid most canned foods, especially those lined with BPA.
- We don't cook from prepackaged boxes.
- We eat sweets minimally and choose fruit instead as our "dessert"!
- We incorporate at least 2 different vegetables in lunch and dinner meals.
- We avoid Food Coloring, High Fructose Corn Syrup, Corn Syrup, and other refined sugars.
- We avoid unhealthy GMO oils such as Canola and Corn Oil.
- We're gluten free but we limit the use of Potato Starch, Corn Starch, and Tapioca Starch because they are not the healthiest for you.
- We buy high-allergy-causing foods only in ORGANIC such as peanuts, soy, corn, dairy, etc. Most allergies come from the food being GMO'd (genetically modified) or from what pesticides/chemicals they use on them.
- We eat meat sparingly and strive for free-range and organic. We believe it's extremely important to maintain meat in a diet because of the valuable micro-nutrients only it can supply. (Sorry Vegans but some of the most unhealthy patients my husband and his brother, Dr. Jared Nielsen have seen are Vegetarians.)
Maybe this list is along your path. Maybe it is a bit extreme. Whatever the case, we invite you to develop your own food philosophy based on the true knowledge that you learn. As you do, keep this in mind: some foods are ACTUALLY harmful while other can actually heal the body. The more healing foods you eat, the better you will feel and longer and happier life you will live.
