Note from jalene:Pst...I decreased the sugar (from 1/2 to 1/3 cup) and the jam (from 2/3 to 1/2 cup). We're just not big sweet-toothers but you won't miss it! Add it back in if you need to.
On one batch I was experimenting with I used some freezer jam and the results were magical- the jam caramelized and made them so delicious!

I love this time of year! School is almost out, summer days are getting longer, and the temperature is heating up! During the summer I tend to cook a little lighter-quick dishes that don't heat you up as you make them. I have a great light dish for you that is perfect for either lunch or dinner. Yum! I LOVE this soup so much. It's almost addictive. Right now as I type my tummy is so full! I should have stopped at 1 bowl. Ha ha. Even Audrey reacted the same way! Usually she says "No" when I ask her if she'd like more but today she surprised me with a resounding "YES!" Success! And it's completely Gluten and Dairy Free! :) I love this recipe because the base is made from my new Gluten Free Cream of Celery Soup recipe (which is amazing just by itself). I'm SUPER excited about this next recipe. I know I sound like a nerd but, this recipe seriously makes me so giddy and excited. I have searched SO LONG and hard for a good gluten free replacement for cream of chicken (or cream of anything for that matter!) I have tried various website recipes, recipes from my local health food store, even recipes from a couple of cook books and I've walked away each time thinking, "eh. There's got to be something better..." And there was! This recipe unlocks the door for SO many other recipes! As a gluten-free-er, if I come across a recipe that contains "a can of cream of..." I usually discard the recipe before it even has a chance to begin! But not all of that is changing! I've already been trying this recipe out in some of my old gluten favorite meals and it's been a hit! (Hence my giddiness!) So keep a weary eye out, I'll be posting those soon! ;) Enjoy! Gluten Free Cream of Celery SoupFollow the directions as above except sub out the 1 cup chicken for 1 cup of diced celery. Add the celery when you add the onions and garlic to the pan so it has a longer chance to tenderize. (Otherwise you'll end up with a crunchy cream of celery soup.) A couple of you have been asking for more Candida Cleanse approved recipes. This great healthy breakfast idea is perfect towards the end of the cleanse as you re-introduce fruits back into your diet. It only takes 2 main ingredients and cooks up delicious! Of course, even if you're not on a cleanse, this omelette is a perfect breakfast treat! Rice is one of those dishes that can go with just about any meal (especially if you were to ask my husband, remember he's part Asian). Early in our marriage I made him a pot roast with carrots, mashed potatoes and gravy and the first question he asked me was "Where's the rice?" Growing up in Idaho I don't think we ever had rice unless it was with stir-fry. Our go-to side dish was always potatoes! Over the years I've kept the rice coming for my husband but secretly one of my favorite ways to eat rice is in RICE PILAF. What is Rice Pilaf you might ask? Simply, rice cooked in a seasoned broth. Now granted, you can get all sorts of fancy with the stuff and, depending on which part of the world you're in, rice pilaf can contain meat, veggies, and all sorts of spices. This next recipe is a SUPER EASY basic one. It's so easy that all you have to do is mix the ingredients together and bake it! Walla. Beginner rice pilaf for you. Store covered in the fridge. Extras can be frozen in a ziplock freezer bag and then thawed- I always add a titch more chicken stock to help moisten it back up. Man, it was HOT outside today! It's days like these that make me want to just have a salad for dinner. Of course my salads change as often as my attention span. ;) Sometimes it's a hearty salad with chicken, hard boiled eggs, tomatoes, (nitrate-free) bacon and my gluten free ranch dressing. Other times, it's on the sweeter side with freshly sliced pears, blue cheese crumbles, caramelized nuts and my sweet raspberry vinaigrette dressing. This next recipe is a sweet way to eat your nuts. If you haven't tried making caramelized almonds yourself, you should really try it! It's ridiculously easy and quick. Plus you'll save money (not to mention end up with a healthier version!) Note from jalene: Don't want to use sugar? Try 2 Tbsp of honey instead! It creates a slightly different taste and a stickier end result but they're just as great. Simply combine the honey and nuts all together in the pan and stir constantly until your desired shade of brown is reached. Craving a tasty salad?
