Not only is my smoothie recipe Dairy Free it's Sugar Free too! (That is besides the sugar found naturally in the strawberries and bananas.) The best part of this recipe- it's SO versatile. It can be a smoothie, frozen into ice cream or even popsicles! PS-If you want a good read sometime you should browse through the nutrition facts of McDonalds. It's crazy what they put in things. Take French Fries for instance... "French Fries: Potatoes, vegetable oil (canola oil, hydrogenated soybean oil, natural beef flavor [wheat and milk derivatives]*, citric acid [preservative]), dextrose, sodium acid pyrophosphate (maintain color), salt. Prepared in vegetable oil (Canola oil, corn oil, soybean oil, hydrogenated soybean oil with TBHQ and citric acid added to preserve freshness). Dimethylpolysiloxane added as an antifoaming agent. CONTAINS: WHEAT AND MILK. *(Natural beef flavor contains hydrolyzed wheat and hydrolyzed milk as starting ingredients)" YIKES! To make popsicles: Follow the directions above and then pour into popsicle molds. Freeze for at least 4-6 hours or overnight. The other day I had some of my yummy dinner rolls that were starting to dry out. (They were at least 3 days old.) Instead of tossing them out I decided to experiment making some croutons. They turned out great! They're crunchy, browned well, and tasted VERY identical to regular croutons. Plus, it's a great way to use up old rolls! I used my soft Gluten Free dinner rolls but you could also try it with your own Gluten Free bread. This past weekend we went to Yogurtland for dessert! It's one of the few places that has gluten free, dairy free ice cream! Audrey was IN HEAVEN! And even though she IS gluten and dairy free she knows exactly what ice cream is. Why? Because we make our own at home! It's INCREDIBLY easy (and so much cheaper than buying!) but you do need an ice cream maker. Costco had one on sale the other day for $17! We bought ours for around $20. It has already paid for itself! If you have not tried coconut ice cream before, it's amazing. The coconut milk makes it SO creamy and so the end result is a consistency very similar to a dairy-base ice cream. This recipe is very easy to throw together and then it only took about 20 minutes in the ice cream maker! Did you know that Panda Express does not even have 1 gluten free item on their menu? Yikes! You would think a lot of their menu items wouldn't need gluten! Oh was that mean of me or what to make you wait almost a week for this recipe?! These babies are so AMAZING. I have been trying to not make them every day but as soon as I make a batch they seem to disappear. Not only do they taste amazing but they're super cute too! I've seen some gluten free cinnamon rolls that don't even look appetizing! The bonus on these ones...they're pull-aparts! You don't even have to mess with rolling them out! (Which lets be frank, gluten free dough does not have the same consistency to be rolled out. It's just too sticky.) (Before we begin I must say: though you don't have to have one for this recipe, a 1 inch cookie scoop comes super in handy.) 3. Using a 1 inch cookie scooper, scoop a mound into your cinnamon and sugar. Coat the dough and place into muffin tin. Repeat two more times so you should have a total of three cinnamon & sugar coated mounds in 1 tin. Repeat until the entire dough is used. 4. Pour 1/2 tsp of the melted butter over the top of each muffin section. (This gives an excellent taste and helps prevent sticking.) 5. Spray a sheet of plastic wrap with olive oil and place on top of the rolls. Let rise about 15 minutes. Preheat your oven to 375 F. 6. Bake for about 15 minutes or until light brown. One day while I was out doing my normal grocery shopping I stumbled upon some fresh basil. And we're talking so fresh it still had the roots and dirt attached! But that made me think... Oh my goodness! I could grow my own basil and save a lot of money. Basil is easy to grow inside your house and is low-maintenance. Plus you get that "eating for free" feeling. You should try it! So whenever my basil leaves are large and plentiful enough, I make this next recipe. There's nothing like taking a plant straight from it's root and eating it. Of course if you don't grow your own basil you can always find it at your local grocery store as well. ;) I made this Gluten Free as well as Dairy Free so Audrey can eat it. It's so yummy, you wont even miss the cheese! Of course if you are not vegan, you can always sprinkle a little fresh Parmesan cheese on top for an extra bonus. They are such yummy little treats BUT you actually can feel good about eating them. The only flour I used was brown rice and I threw in a little secret ingredient. Want to know what it is?! I'll give you a clue... It's over running my garden... That's right! Zucchini! But just look at those pictures. You can't even see the Zucchini, even if you dissected the suckers and LOOKED HARD for it!
