We got this recipe from my sister-in-law Kemy who made it for us once. We immediately fell in love with it and begged for the recipe! My husband and I tweaked it a bit so Audrey could eat it too. We love this recipe! We use it for quick, great-tasting lunches. It's a great source of nutrients including Protein, Fiber, Vitamin A, Vitamin C, Iron, Magnesium, Manganese, and Copper to name a few! I use Vegenaise instead of Mayonnaise so Audrey can eat this since it's a good idea to keep little ones off eggs until they're at least 1. Vegenaise a great Mayo-substitute that you can get GF, DF, SF, and EF! I found mine in the refrigerated section of my health food store. (PS-If you're not concerned about your chicken salad being egg-free you can use regular mayo instead! It works just as well.) If you haven't ever tried making your own milk alternative, you really should! It's SO easy and you save a lot of money! It's also a sure way to guarantee it is Gluten-Free and has no un-wanted added ingredients. This next recipe is one of the cheapest milk alternatives to make. It's also the least likely to cause any food-related allergies. The only downfall is it's also not the most nutritious. For this reason we alternate between Rice, Almond, and Soy milk in our home. Be sure to check out the notes below for another way to add protein to your Rice Milk. You can use white or brown rice to make this recipe. White rice has more of a neutral taste but it is less nutritional. You can easily convert this recipe into Vanilla Rice Milk by adding 1 & 1/2 tsp of gluten free vanilla. ![]() Rice Milk (Gluten-Free, Dairy-Free, Refined Sugar-Free, Soy-Free, Nut-Free) Created by jalene Ingredients:
Refrigerate and serve cold. Makes 4 cups, which fills 1 large mason jar. I use the plastic lids instead of metal because of the rusting issue. You can purchase the plastic lids wherever canning supplies are sold.
1 cup of uncooked rice will yield 4 large mason jars of Rice Milk! Now that's some cheap milk! *Note: To add some protein as well as dietary fiber, phosphorus, magnesium, and iron to our Rice Milk I sometimes add in Quinoa. I usually cook 1/4 cup Quinoa with 3/4 cup white rice. (Just be sure to wash your Quinoa super well before cooking to rinse off the strong taste.) If you have picky kids (or husband) you can start out adding in less Quinoa and gradually increase the amount with each batch until they get used to it. Milk Replacement TIP:

One day my family and I were watching the Disney movie: Ratatouille when I thought, "Man! I wish I knew how to make that dish!" You know, the one at the end of the movie where the critic tastes it and flashes back to happy days of his childhood? Oh, I wanted to feel like that! So, I pulled out my Betty Crocker cookbook and found I had a recipe for Ratatouille! Yes! All happy, I made my dish but it turned out looking a lot like this: ![]() Yuck! Not only did it taste gross but it looked gross too! This is what I would call Rat-Patootie! That didn't look anything like the movie's!! So I dug a little deeper and searched a little harder and now I have adapted a yummy Disney-Ratatouille-worthy dish. It does take a little bit of prep (more so than the original Betty Crocker recipe) but the end result is so amazing you're going to LOVE it! It has 3 specific layers that you need to make. You can serve this over white rice, brown rice or quinoa to make it more substantial. So I might be addicted to donuts. I don't know why. Maybe it's the shape? Probably the sugar... and the sheer joy that I get when I eat one! All I've got to say is thank you to the Dutch people that shared this treasure of a treat with America. I've been playing around with a lot of doughnut recipes lately and this one is definitely one of my favorites. What? How can you have tacos without meat you ask? Well, this next recipe is an amazing alternative to beef tacos. In fact, our family loves it so much we PREFER it over regular tacos. Not only is it cheaper to make than beef but it's also healthier for you. Tom Kung Gai...Funny name. INCREDIBLE SOUP! In fact, my husband absolutely LOVES this soup so much, he orders it no matter what when we go to a Thai Restaurant. So of course I was determined to know how to make it! You pronounce the name: Tom (hopefully you know how to say that one) Kung (as in KUNG fu fighting) Gai (as in see that GUY over there?) The base for the soup is coconut milk which is an excellent substitute for heavy cream.
