It's Summer time and I usually don't make a lot of soups but the baby in my belly was craving me some Chili! The only trouble is my husband is not too keen on the kidney bean (which is classic in the dish normally). So, I subbed in his other 2 favorite beans, added my own touches, and then found out I was out of tomato juice so I improvised a little more... The result: AWESOMENESS. Such a great tasting chili and super easy to make. You can do it all in one pot and it cooks up pretty quick. It's also freezable so you can have it quick another time. Perfect. Hope you enjoy it! To freeze, cool the soup completely and place into ziplock freezer bags. Then simply consume within 3 months. If you're keeping this in the fridge instead, consume within 3 days. PSSST...Of course, you can sub out any of the beans for ones of your choice but the black beans and great northern beans go really well in this combination.

Janey's Chocolate Chip Cookies (made Gluten Free) My sister-in-law Janey makes the most amazing yummies. The only problem...they're gluten infested. :( Before my gluten-free days I would devour her homemade rolls, sugar cookies, and chocolate chip cookies! I finally got my hands on her chocolate chip recipe and converted it so we could enjoy them again! These cookies have such an amazing flavor and bake up beautifully. They're SUPER addictive so watch out! This MIX can also make yummy peanut butter cookies. See the alterations below. This MIX can make peanut butter cookies as well! Simply follow the directions above except for replace the 1/2 cup shortening with 6 Tbsp instead and replace the 3 Tbsp butter with 5 Tbsp peanut butter. Chocolate chips are optional in your peanut butter cookies so you decide. ;)
I have a confession...the crockpot has become one of my best friends this summer... Hot temperatures outside, being very pregnant, and not wanting to spend time on my feet cooking over a hot stove has turned me to some great simmer-all-day meals that I LOVE! You gotta love easy cooking! This next recipe only takes 3 ingredients and a crockpot. Perfect taste for a summer meal and perfect hands-free prep! The secret ingredient? Stubb's Gluten Free BBQ Sauce. When I was searching online for other crockpot BBQ chicken recipes, most of them require italian dressing, Worcestershire sauce, sugar, and more! So, I've been playing around a little bit with a new gluten free roll recipe that I think you're all going to love! I wanted something a little easier, faster, and with simpler ingredients than my other Gluten Free Soft Dinner Roll recipe. ...And the result is awesome! These rolls are completely gluten AND dairy free and in fact, they only use water and oil as their base instead of a butter sub or milk sub. They bake up beautiful with a great golden crust and actually make wonderful hamburger buns too. But don't take my word for it! Try them out and let me know what you think! Note from jalene:Grapeseed Oil has a higher cooking temperature than Olive Oil so it is highly recommended for this recipe. It also has a very minimal flavor so it will not affect the taste of your rolls. It is healthier than Canola Oil or other alternatives so we highly recommend only using Grapeseed Oil for this recipe. For HAMBURGER BUNS I use 1/3 to 1/2 cup of dough per roll instead of 1/4 cup. For EGG FREE ROLLS simply combine 2 Tablespoons of Flax Seed Meal with 6 Tablespoons of water and allow it to sit for 10 minutes. Add this mixture in when the recipe calls for the eggs. Using Flax Seed Meal makes a great moist roll with a great texture so even if you're not allergic, it's worth a try! Sometimes on those busy nights you just need a quick meal. This is a great 30 minutes or less kind of recipe that you're going to LOVE! The curry is mild, has a light flavor, and is a great beginner sauce for those little ones that are afraid to try new things. ;) If you can't find the sauce in your local grocery store, Amazon offers it as well. I bet my family is happy...I finally have this recipe figured out! We've all been having blueberry pancakes off and on for the past month! It all paid off though because these babies are good! Fluffy, golden, and they taste amazing. They're sure to be a crowd pleaser! We've had my nephew staying with us for a little bit which is great because he's a gluten-eater normally. So that means his memories of gluten-infested foods are still fresh in his mind when he eats our gluten-free food. So far he hasn't been able to tell the difference between my gluten free cooking and "normal" recipes. He also think it's so funny that my husband critiques my food so in depth and honestly! I have some fun news! We found out finally what we're having... and it's a GIRL! Audrey is super excited. Her auntie asked her about a month before my ultrasound appointment, "Audrey, is your mommy having a girl or a boy?" Audrey quickly replied with "A girl...a boy...and a horse!" Ha ha. I hope I don't look that big yet. Anyways, we're super excited to be adding another girl to the family! Scoreboard: Boys 1, Girls 3. OH YEAH! K, on with our regular scheduled recipe. ;) So, no matter how hard I try, there always seems to be over ripe bananas on my counter! No joke. They seem to magically transform into that over-ripe stage instantly. I used to fret but now it just gives me more opportunities to create new recipes. AND Yummy! I LOVE these next muffins! Now, I'm not much of a nut fan in my food. Don't get me wrong, I love nuts plain but put them in something yummy like a muffin or brownie and it tends to sour the whole experience for me. Weird I know. So when I do use them, I have to hide them from myself! ;) I created a great Walnut Streusel that gives a not only the perfect hint of walnut flavor but a yummy topping for an already delicious muffin.
