Recently, my husband and I went to visit his 5th grade teacher. I know what you're thinking...who keeps in touch with people that long?! Ha ha. Apparently my husband does. ;) Long story short, his teacher has this beautiful Pecan tree in her backyard and we walked away that day with 3 huge bags of Pecans! Oh man, good thing Pecans can freeze. Now my main task is how to use them! So, when life gives you Pecans, make Pecan Pie! Most Pecan Pies have corn syrup or flour in them, making them something we would NOT eat. Luckily, I found a great Corn Syrup free recipe online and then altered it to be Gluten Free as well. The result...yummy! The pie is slightly less sweet than the original version but it's just as tasty. Thanksgiving is just around the corner! Are you in charge of cooking the turkey this year?! We're sharing our family secrets to an AMAZING turkey that not only is extremely tasty but moist too! If your turkey is frozen, TODAY is a good time to start thawing! Typically you should remove your turkey from the freezer and place it in the refrigerator 2-4 days BEFORE cooking. We thawed ours 4 days and there was still just a bit of ice. If you haven't thawed your turkey by Thanksgiving morning, search online for other optional thawing and cooking methods. I know I've been sharing a lot of desserts lately... my husband would totally disapprove ;) but I want to help you be prepared for Thanksgiving! That's a noble cause right? So I'm posting this out of love! I promise I'll get back to some dinners after Turkey Day. Just look at that crust! That's a gluten free lattice crust! I was super excited for it. It was a lot of fun to do. If you're not into the lattice look you can also just roll out a top crust and use a small cookie cutter to "poke" holes in it. This is a great recipe to make the day before. The crust takes at least an hour to sit in the fridge so keep that in mind in your planning. 4. Visit this website for great instructions and pictures on how to do the lattice crust. If one of your strips comes apart just piece it back together with your fingers. 5. Once your pie is completed, whip your egg white slightly and then paint the top of your pie with it. (This helps with the browning look.) Bake for about 50 minutes or until the crust is lightly brown. Have some leftover pie crust dough?! This website has a GREAT treat to make with your dough. It's a gluten-infested site but the idea is the same. Simple add your favorite jam to make a delicious cookie! If there's one item on Thanksgiving that I absolutely can not go without...it's STUFFING! (Well, and pumpkin pie but that's a different post now isn't it.) When you stop to think about it, stuffing is such a funny dish- dried out bread that is made wet again and mixed with seasonings. But it sure does make a great side dish to Turkey! Stuffing (or Dressing as it is sometimes called) has different variations all over the world! This next recipe is closer to a Stove Top Brand version but a lot healthier. (PS Kraft sells over 60 million boxes of Stove Top every Thanksgiving! It's about time they come out with a gluten free version don't you think!?!) So, I've been playing around with this recipe for the past month (which means my family has been stuffed with stuffing lately). I think you're going to LOVE this one! It's really simple and can be split up into 2 days if you want to do some prepping BEFORE Thanksgiving. Then on the day of, it only takes 20-25 minutes of baking. Hint from jalene:Keep this cake refrigerated right up until you cut and serve it! If not, when you cut into the cake the filling will smear into the pumpkin part making a not as pretty presentation. Learned this the hard way... :(
(as pictured above) It's getting colder outside and the pumpkins are starting to pop out onto people's porches! My pumpkin-fever is just getting revved up! (If you missed my Gluten Free Pumpkin Pancakes last week you'll know I have a secret obsession with pumpkin. Maybe it's not so secret anymore... :) This may sound nerdy but around this time of year I LOVE to open one of those huge cans of pumpkin and then see all the different pumpkin recipes I can make trying to use the entire can up! In the past week we've had pumpkin pancakes, pumpkin cheesecake, pumpkin bread, pumpkin cookies, a pumpkin jellyroll... all recipes I hope to perfect and post soon! So, as I was looking for some of my favorite pumpkin recipes this year I remembered this one in particular that I used to make a few years ago. I originally found this recipe in a magazine and I think it is sponsored by Karo Corn Syrup. I'm not really sure though who the author is??? The only problem with this recipe- we try to avoid corn syrup like the plague! Corn Syrup (is made from corn) and 95% of all corn products on the market are made from Genetically Modified Corn. Genetically modified products are unhealthy because the body has a hard time recognizing them as food. They have been so drastically altered from their original. For example, ancient wheat used to have only 14 chromosomes. Today it has 42! Yikes! So, I know I've said this before but it's a good reminder... stay away from GMO foods if all possible. We proudly sell non-GMO cornstarch in our online store if you need some. In fact, I'm going to post 2 pumpkin cheesecake recipes that you can choose which one to make. One has cornstarch and the other does not. Both taste great. They're just slightly different with amounts. The first one is my favorite though. Bake for 35 minutes or until set. (This means if you slightly shake the pan the center does not jiggle and when you touch the top slightly it bounces back up.) Chill for at least 1 hour in the fridge. This can be made the day before and refrigerated overnight as well if you need a make-ahead holiday dessert. Simple cover before refrigerating. You'll notice these slightly "deflate" in the center after removing them from the oven. To "cover" this you can top with whip cream or dairy free whip cream and then sprinkle on some ground cinnamon. One of the biggest complaints that I hear from people about being gluten free is about the BREAD. "It's like eating sawdust!" "It's SO dry, it just crumbles when you eat it." WELL NOT THIS ONE! You will be so pleasantly surprised when you try these next rolls. I took 24 of them to a family reunion for sandwiches and before you know it they were gone! I love this recipe so much I'm experimenting with it to create other variations (soon to come)! Until then, enjoy these basic dinner rolls. They're moist, hold together well, taste really similar to a regular dinner roll, and they are great for sandwiches. 7. Remove plastic wrap. 8. Bake for around 15 minutes or until tops are light golden brown. Cool slightly and remove from pan. These taste AMAZING hot out of the oven but they are also good at room temperature too. Store in an airtight container. You can even freeze them and then heat them back up when you need them. Recipe update: I now use 2 cups brown rice flour instead of both white rice flour and brown rice flour. It's a little bit healthier and it still works out great.
