Got to love the slow cooker! This next recipe is a great prep it and leave it to simmer all day favorite at our house. I am loving this next recipe. Coconut and chicken is like a match made in heaven. And this next recipe, is surely no exception! Not only is this chicken rolled in coconut flakes but in coconut flour and coconut milk as well!!! It's a delicious combination your entire family will sure to love! This next meal is a super quick, yet satisfying, comfort food. It's a classic from my childhood turned gluten free. Growing up we served it over hot toast but now we usually do rice or quinoa. I should really call these my husband's favorite enchiladas but creamy & chicken explain them a little better for the rest of you... ;) He requested these for his birthday so you can imagine they must be good. They're even really good dairy free which surprised me! Of course you don't have to make them dairy free if you're not allergic but I thought I would include what I used just in case. To make this dairy free...Simply sub in your own favorite dairy free cheese OR you can leave the cheese out altogether. Just be sure to increase the salt to 1 tsp.
So after becoming gluten (and dairy) free, I had basically given up hope of ever eating this yummy dish again. I have a confession...the crockpot has become one of my best friends this summer...
