You know those yummy fried onions that you put on top of Green Bean Casserole? Too bad they're gluten-infested! About 6 months ago one of our friends shared this amazing Slowcooker Refried Bean recipe with us. I loved it so much I wanted to figure out how to make it in the pressure cooker as well! Sometimes necessity is the best inventor. I was working on a great recipe today but needed some Tomato Juice. Just my luck, I was completely out though! I did have a bunch of cans of Tomato Paste that I've been wanted to use up so, after a quick search on the internet, I learned this great trick I wanted to pass along: You can make your own Tomato Juice from Tomato Paste! It's so easy you might want to cry. It only takes 2-3 ingredients and you can actually save room in your cupboards from storing such smaller cans than the large cans or plastic containers Tomato Juice comes in. I love it! I'm SUPER excited about this next recipe. I know I sound like a nerd but, this recipe seriously makes me so giddy and excited. I have searched SO LONG and hard for a good gluten free replacement for cream of chicken (or cream of anything for that matter!) I have tried various website recipes, recipes from my local health food store, even recipes from a couple of cook books and I've walked away each time thinking, "eh. There's got to be something better..." And there was! This recipe unlocks the door for SO many other recipes! As a gluten-free-er, if I come across a recipe that contains "a can of cream of..." I usually discard the recipe before it even has a chance to begin! But not all of that is changing! Gluten Free Cream of Celery Soup![]() Follow the directions as above except sub out the 1 cup chicken for 1 cup of diced celery. Add the celery when you add the onions and garlic to the pan so it has a longer chance to tenderize. (Otherwise you'll end up with a crunchy cream of celery soup.) Ah man... Ranch Dressing is one of those things I don't think I could live without! It's difficult enough to find a Gluten Free mix but then throw Dairy Free, Soy Free, and MSG Free in there too and you might as well give up hope... until today! I do have a great Gluten Free Ranch Dry Mix that I LOVE to use but it's made with buttermilk so poor Audrey can never try it. I wanted to come up with a CLEAN ranch. One everyone could eat. Thankfully Food.com led me to an answer! My family is so pleased with this Ranch Dressing, we're already on our 2nd batch of it! Don't worry, I put it on everything... salads, chicken strips, baked potatoes, baked french fries, and don't even get me started on all the recipes this allows me to create now! I wouldn't call this Nutella though it is very good variation! It's so yummy, it tastes like an almond joy. It is definitely healthier for you too than Nutella with it's natural sugars and lack of allergens, such as dairy. I was so pleased with how it turned out. I've been spreading it on gf pancakes, gf crepes, gf toast, and pretty much anything else I can think of. Chocolate goes with everything right? Don't worry, if you're allergic to Hazelnuts you can substitute almonds instead! One day while I was out doing my normal grocery shopping I stumbled upon some fresh basil. And we're talking so fresh it still had the roots and dirt attached! But that made me think... Oh my goodness! I could grow my own basil and save a lot of money. Basil is easy to grow inside your house and is low-maintenance. Plus you get that "eating for free" feeling. You should try it! So whenever my basil leaves are large and plentiful enough, I make this next recipe. There's nothing like taking a plant straight from it's root and eating it. Of course if you don't grow your own basil you can always find it at your local grocery store as well. ;) I made this Gluten Free as well as Dairy Free so Audrey can eat it. It's so yummy, you wont even miss the cheese! Of course if you are not vegan, you can always sprinkle a little fresh Parmesan cheese on top for an extra bonus.
