I hope you are as excited at this recipe as I am... First of all it's a gluten and dairy free. Second, it's FREEZABLE so you can make it ahead of time, even double the batch if you prefer and freeze it for quick ready use later! It's brilliant! I make mine about 11 inches across or less so they can fit into the gallon ziplock freezer bags. The best part about this pizza crust, it's SO MUCH CHEAPER than buying a gluten free crust at your local health food store. I was just there today and GF DF pizzas (for 1 pizza) were about 8-10 bucks! Enjoy! If you are freezing the crust place on a cooling rack and cool completely. Then transfer to ziplock freezer bags. When ready to use, pull out, top and bake in preheated oven at 425 until cheese is melting and turning brown.

In a lot of mexican restaurants enchiladas aren't baked in the oven. They're thrown together at the last minute! Why not try that at home for a quicker version? My sister-in-law has been in town and she has the cutest little boy just 5 months younger than Audrey. (Be sure to check out the funny video below of them.) My sister-in-law's son is gluten and dairy free also so she has been picking my brain for the types of meals I feed Audrey. Since my husband and I mostly eat gluten free and dairy free, Audrey eats what we do. I simply chop it up for easier chewing. However, there are some occasions when we do have a little dairy in our meals and on those days I need something quick and easy to throw together for Audrey. This next recipe only takes 5-7 minutes from start to finish. It's a great meal to sneak in a lot of vegetables. I categorized this meal as a "Kid Meal" to the right but you can also try this for adults. Simply leave the noodles whole. Tip from jalene:If you start adding in food when a child is young they are more likely to eat it as they get older. If your child is having a hard time with "weird" vegetables talk about the food you are giving them. For instance, if you know your child may have an adversion to "green things" in their spaghetti teach them about the powers of spinach! Use Popeye if you need to! (If you need some help of the benefits of spinach see HERE.) Often letting a child know what a vegetable will do for them (spinach-strong bones & immunity, carrots-better eye sight) will encourage them to eat it. Audrey & her cousin...(Ps- It was a windy day. This next treat is a healthy-sweet-tooth-satisfying-snack!! It's low in fat (and what little fat it does contain is the healthy kind from coconuts.) It has natural sugar from maple syrup and natural cinnamon spice. It's a great go-to recipe for a FAST snack as well. It took me only about 5 minutes to make! Not only that, it contains NO dairy, gluten, and it's VEGAN! Audrey LOVES this popcorn as well and I feel wonderfully guilt-free giving her a bowl knowing there's only a teaspoon of maple syrup! HAPPY 4th OF JULY! So everyone knows that when your bananas get old it's time to make banana bread. But what do you do when your banana bread gets old? MAKE FRENCH TOAST! Even if the bread is starting to get dry- the egg helps lock in and bring back to life the bread. This is a yummy favorite in our home. I forgot about all my butter recipes until she said something! So thank you! We make our own cashew, peanut, and almond butters and I'm working on a coconut butter recipe as well. I make these from scratch to SAVE MONEY (because eating gluten and dairy free can get expensive!). Also, I find it tastes better, is fresher, and I CAN CONTROL what goes into it. Did you know that almost all store-bought peanut butters have sugar in them? Weird. At least I think so. I don't even think it needs it so pardon my no sugar recipe below. Store in an airtight container in the fridge and use within 1 to 2 weeks for the freshest taste. Makes about 1 cup. Tips from jalene![]() If you need more oil, try adding only 1/2 tsp more. I don't suggest more than 2 tsp because it will produce an oily, running peanut butter (which does not sub good in baking recipes). If you're using a Blendtec, I usually blend it on the highest setting (10) a couple of times, scraping the sides. It gets it so creamy! I have seen other people use honey roasted peanuts instead of regular peanuts. Just beware. Some brands contain MSG in them! If you want to make this recipe super-from-scratch you can also get raw peanuts, oil and salt them yourself, and toast them in the oven at 350 F until golden brown.
