With a little adaption they were gluten free friendly... and delicious! I used a cookie scooper to make them into perfect uniform balls and they cooked up in the same amount of time it takes to boil my gluten free spaghetti noodles! The Quinoa and Veggies make them super healthy and help your little meat lovers get some other nutrients in other than meat. Audrey would eat a dozen of these if I let her! Hope you enjoy them too! I realize that the majority of my blog followers wont be able to use this next recipe but I wanted to provide it for the small percentage of us with babies that are just being introduced to solid foods. I hope you can walk away a little more educated and aware so that you may be able to make healthier choices for your little ones. Before our 2nd daughter was born, I happened to be over at a friend's house who had a little 6 month old. On the counter was a box of their baby's rice cereal. I was alarmed (to say the least) when I noticed the long list of ingredients included in what was supposed to be a simple first-time food for babies. As some of you already know, when a child is first starting to eat solids, it's important to introduce one food at a time into their diet. Rice cereal is no exception to this rule! Simple ingredients such as "brown rice" should be practically the only item appearing on the ingredient list so that if the baby has any reaction, that food can be removed from the baby's diet. As I read over the label of my friend's baby cereal I noticed Soy was listed at least 2 times in different forms. We talk mainly about Gluten and Dairy allergies on this website but did you know that there are eight foods that account for 90 percent of all reactions. And SOY is one of those eight. The other are milk, eggs, peanuts, tree nuts, wheat, fish and shellfish. Studies show that if you can keep your child off of these 8 allergies until the age of 2, the better chance your child will have at not developing a allergic reaction to them. According to a study released in 2013 by the Centers for Disease Control and Prevention, food allergies among children increased approximately 50% between 1997 and 2011. Yikes! And with allergies on an all time high, keeping your child off of these 8 common allergens is something big YOU can do to help your child since hereditary genetics are not on your side as well. Bottom line, read the labels. Understand what ingredients are being consumed by your child. Cut out foods that harm and incorporate back in foods that are REAL and as nature intended. So with that said, here's a super simple baby rice cereal you can make quickly in less than 5 minutes and feel good about serving to your little one. Babies...enjoy! You're going to want to sink your teeth into this next recipe! I know my family sure has. I can't keep enough of it on hand. It keeps getting devoured! Funny thing is this recipe came about by pure curiosity! I've been on a Quinoa Quest lately. It's not my favorite stuff to eat by itself (especially if it has not been properly washed before cooking). But I know how super incredibly healthy Quinoa is so I bought a giant bag of it at Costco and I've been getting to work-trying to sneak it into everyday recipes. The results have been awesome! This one is definitely one of my new favorites. My husband claims it's the best gluten free bread he's tasted in long time! The bread has a fantastic flavor and it cooks up moist in the middle and crispy on the outside. You can even freeze the flatbread and reheat it later by using your toaster. Here's a dinner we love at our house year round. We lovingly call it a ”Hobo” but for the rest of you, you might know it better as a Tin Foil Dinner. This recipe is super easy to throw together and you can make it as a giant meal or individually for a special customized delight. You can cook it over a campfire or in the oven. Cleanup is super easy too! Our favorite way to dish this up: cut up all the veggies and meat and then allow everyone to create their own meal. The leftovers are even delicious for breakfast! In the morning we simply fry them up in a pan with some oil or butter until warm for a unique breakfast. This is the sausage brand I used. It's Gluten Free and tastes yummy! The only thing we don't like is it contains Nitrates. (Did you know if you take Vitamin C when consuming meats that contain Nitrates it helps prevent the formation of carcinogenic nitrosamines which are not good for your body! If you're gluten free, you can probably sympathize with just about anyone who has to be on a restricted diet. Mainly because you know how it feels to go without! Hopefully this website is starting to help you realize you don't have to go without! We just mix things up a little differently, that's all. ;) As some of you may know my two sweet girls have Gluten and Dairy allergies so anytime I become a nursing mom that means I have to be very strict with my diet. But, after I first had my 2nd child not only was I gluten and dairy free but now I also had to be Chocolate free for the baby! Good grief. Have you ever eaten pancakes for breakfast and then in less than an hour or two it feels like you're starving again? Chances are your pancakes weren't rockin' the lasting protein power of these next Nielsen family breakfast favorite! Seriously, don't be fooled. Let's face it, if you're new to gluten free (or even if you're a pro) it's really hard to find a good kid-pleasing sandwich substitute! Let me introduce you to a yummy solution! Peanut Butter & Jelly Waffle SandwichesI simply used my Husband's Favorite Waffles Recipe made on a regular waffle maker (not a Belgium-style) and then slathered on my favorite organic peanut butter & jelly. Walla! The waffle is such a great unsweetened base you could also do sausage and an egg instead of pb&j or even deli meat and cheese. So this one time I went MIA for a while! "What in the world happened", you ask? "Where are your new recipes and delightful opinions jalene." ;) ha ha.
Well, a whole lot has been going on! Let's start out with the most hindering... my dang computer. "Gave up the ghost" finally as they say! It all started with a black dot that started to grow (daily) bigger and bigger on my screen. Which, don't get me wrong, was completely not a problem until one day I turned on my laptop and the entire screen was black. So, I turned it off and it never turned back on again! :( Good thing I had all my pictures backed up! But seriously... what a pain. So, here I am with a new laptop, thanks to my caring husband. Totally serendipitous he purchased one for me for Christmas. (Thank you honey!!!) In other news, we're also moving! And it's not some move across town move either. It's a sell most of all that we own, downsize and give-a-way, scan and throw away kind of a move. It's been really good for our family to realize what's really important as we go through our things! Unfortunately, listing items on ebay, KSL, and making weekly trips to the D.I. is taking up too much time to let my creative juices flow in the kitchen... Our official move date is on January 18th so until then my recipes may continue to be a little scarce. Sorry! But I will be back to posting 2x a week again I promise!
