I seriously have been trying to make a really good cornbread for almost a year now! (Granted, I wasn't trying everyday, but still, that's a long search!) Each time I made them it was with a different recipe. I have never been satisfied though! Until now! I'm just going to warn you... you just might think these are the best cornbread muffins you've ever tasted... cuz we sure did! I LOVE the fact they are made with SUPER HEALTHY ingredients too! No gluten, no starch flours, no dairy, no eggs even! But you wont even notice they're not there! I don't have corn flour - only corn meal. Could I use corn meal in place of the corn flour?

Went to the store to get corn meal and noticed Bob's Red Mill it is not certified gluten free. I noticed the corn flour next to it was certified gluten free. Just wondering if the corn meal is safe enough for those who are very sensitive to gluten/wheat? Can Corn meal ever be substituted with corn flour or does that totally change the recipe?? I know the textures are different.

Bob's redmill has a gluten free medium coarse corn meal but depending on your store they may or may not carry it. If you're Celiac I wouldn't risk using the one that isn't gluten free. Corn meal and Corn flour are the same thing- just ground differently. In recipes they work differently due to their textures so I wouldn't recommend subbing one for the other but you could give it a try!
