I can't believe I haven't posted this recipe yet. I actually forgot about it until I was talking to my mom the other day. She reminded me about it! It's one of the FIRST gluten-free recipes that I ever created! Unfortunately it's not dairy-free because of the buttermilk but a great feature is that you don't need xanthan gum or guar gum to hold it together. Easy Gluten Free Buttermilk Pancakes(Gluten-Free, Corn-free, Nut-free) Adapted by jalene from a recipe by Saco Buttermilk Co. Makes 10 (3 inch) pancakes Ingredients:

And if I was out of maple syrup would honey or agave work as well? And could brown rice flour work too?

Hiya, very interested in trying these as I'm no longer interested in using brown/white rice flour in my baking (poor texture and makes everything crumble). My question is about buttermilk, can I sub out the water for buttermilk along with the 2 additional Tbsp?

Worked amazingly well! Added a 1/4 cup / 28g of almond flour as well and by far the best pancakes I've made since venturing into wheat free territory :)

Would it be possible to use this batter for a baked breakfast muffin? I always make a batch and freeze them to reheat for later days....
