Thanksgiving is over! Hope you enjoyed some of the great recipes we shared! If you're tired of turkey leftovers, this next dish is drastically different and will help mix up those taste buds. It's an easy coconut curry with a tomato twist. My husband absolutely LOVED this dish! He couldn't believe it was made from scratch! He give it his "Restaurant worthy!" approval. ;) Coconut Chicken Curry(Gluten-Free, Dairy-Free, Nut-Free, Egg-Free, Soy-Free, etc.) Adapted by jalene from Carpe Season Ingredients:

Hi. I'm just starting a gluten-free a diet and I am feeling a little confused as I wade through so much information. I am wondering if you specifically buy gluten-free spices b/c I've heard that curry powder and cinnamon and nutmeg all can contain flour. Also coconut milk has an emulsifying agent whch can contain gluten. Anyway, how do you figure out what you can and cannot use? Thanks for your help and this amazing site you've put together. It definitely helps to have good resources to go to.

Hey thanks for your great questions! Concerning the products I use, I always look for the "Gluten Free" label. If there is not one I call the company or use ingredients that my trusted celiac & gluten free eaters are using. Taste of Thai has a great gluten free coconut milk and curry paste. If you can't find that brand, look on the label. If it contains gluten or is processed on the same machinery as gluten it "should" say it on the label. Hope that helps!
