Being Gluten Free has it's challenges. Like going out to eat at any Chinese Food Resteraunt. They're all gluten-infested with their wide use of wheat based Soy Sauce. So, anytime I have a craving, it has to be quenched at home. This next recipe is a simple Cashew Chicken & Broccoli that you can throw together and it tastes fabulous! Mmmmmm! Love it. Food makes me happy. :) Gluten Free Cashew Chicken and Broccoli (Gluten Free, Dairy Free) Adapted by jalene from a Betty Crocker recipe Yields about 4 servings Ingredients:

Yum! This stir fry is delicious. It's been really hard to find a good recipe. It seems like the sauce can seriously make or break this dish. Let me tell ya, this sauce nails it on this one. It has a pleasant kick and a healthy variety of vegetables. It just feels good eating it! Maybe stir fry isn't your thing...but this recipe just might make you change your mind. I hope you all are daring enough to try new things as we are. I've been known to get a little bored in the kitchen and crave something different and exciting... Let me just start out by saying I'm no Stir-Fry expert but I love to eat it! There's actually so many different combinations you can do but we just had this one for dinner so I thought I'd share. If you don't have exactly these veggies, you can sub in other ones you need to use up. Speaking of veggies, did you know that you're supposed to eat 2 & 1/2 cups of veggies a day?! Man, how many of us are doing that? I know sometimes it can be hard! So, here's a great naturally gluten free meal that is PACKED full of veggies and with the garlic and ginger flavored teriyaki sauce, you won't be forcing them in your mouth either! I like to add nuts for extra protein. It makes a great Vegan, meatless meal. Tip from jalene:Like I said, I'm no expert but here's a great article from someone who is. It's a great Q&A session specifically about Stir-frying. It's worth checking out: http://consults.blogs.nytimes.com/2010/09/09/a-cook-talks-about-woks-and-stir-fries/
