Christmas is coming! I can't believe its only a week away from tomorrow. It feels like I have so much to do before then... and that's why this next recipe comes in handy! You can mix it together and let the oven do the rest of the work. I'm dedicating this next recipe to my little sister. She has just recently found out that she's allergic not only to gluten, but dairy as well! She's going through that difficult mental transition right now of "there's nothing to eat..." OH, dear sister, I have over 200 recipes so far for you! If any of you are going through the same transition as her, I strongly suggest checking out my page: New to Gluten Free. It gives you some great starter tips and support through this time. Eating gluten (and dairy free even) is not as bad as you think! There are SO many other things you can eat. You just need to turn your focus to that. My sister asked me a great question the other day that maybe some of you may have wondered, "Without drinking milk, how will I be able to get enough calcium in my diet!?" I think Popeye has the answer you're looking for...SPINACH! And if you don't like spinach, here's a list of other foods HIGH in calcium for you. The truth is, there's a lot of things you CAN eat to provide all the nutrients you need. So sister, I know it's super hard right now, but you'll get through it! Do you make your own hashbrowns for this? So do you cook them in advance?

Great question! I just use an all-natural frozen hashbrown. You could grate your own hashbrowns from fresh potatoes but I have not tried it yet. Just be sure to rinse the starch off and pat dry before adding to the casserole. The only thing that has to be cooked in advanced is the sausage. :) Hope that helps!

After two years I am still referring to your website for recipes!!! Thanks for all the yummy recipes. You are right you have so many recipes for people who are dairy free and gluten free!! Just because you have to be off of certain foods doesn't mean you have to compromise great taste. Your recipes have been so awesome to have!!

I just made sausage, hash brown and egg casserole-gluten free. I subbed in plain unsweetened coconut milk and the recipe called for 1/2 cup flour-I used BRM gf cup for cup. It doesn't taste all that bad...just doesn't taste all that great either. Seasonings taste right. Wondering if it was the flour for thickener or the coconut milk? I'm not new to gf, but am starting to branch out-which means new recipes-b/c I'm tired of eating the same thing-n now am experimenting cooking/baking without lactose too. What do you think about the casserole described above? Thank you in advance.

Connie, it's hard to say without the exact recipe you used, seasonings and all. I haven't used flour to thicken a breakfast casserole before- just eggs so that may have been it. You should try this recipe. Is really good. If you don't like the spinach you can leave it out. ;)
