Sometimes I forget to post the quick little things we eat if we need a fast snack. This next one is a great in between meal for those hungry little eaters. You could even turn it into a meal depending on what you serve with it! We love to throw in avocado or replace the ham for cooked chicken. Whatever combination, it's sure to please! According to my Zyto foos sensitivity test, I need to eat dark meat turkey and no ham at all. I also need to stay away from corn and all corn products. As far as oils. olive oil is a negative for me but canola is ok. I also must stay away from pretty much all dairy so cheese it out of the question. Do you have any ideas on how to revamp this recipe for my sad diet restrictions? BTW....didn't know there are dairy free cheeses. Please enlighten me.

They offer some great Vegan Cheeses. You can find them at your local health food store. As for the tortilla, companies like Udi's provide gluten free tortilla options. They may contain corn so read the labels carefully! That's interesting canola shows up ok because it's derived from corn! Coconut oil would be my second choice or grapeseed oil. Hope that helps!
