My nieces came over the other day and each time they come we try to do a fun surprise for them. This time we told them we were having breakfast for dinner! They thought that was the best idea ever! Only, they request it now whenever they come... ha ha. So to make sure they were packed full of some good nutrients I came up with this recipe. (Secretly, I only had a half a cup of brown rice flour left also so I HAD to improvise from my normal brown rice waffles!) The result was a hit. It's one dinner I didn't have to force them to finish their plates! 3 Grain Waffles (Gluten-Free, Dairy-Free) Created by jalene Ingredients:
I served mine with my dairy-free coconut whip cream and strawberries. YUM! If by some crazy chance you have any leftover waffles, allow to cool and then immediately store in an airtight container at room temperature or in the freezer so they don't dry out.

I am totally new to gf cooking, but this still turns out without xanthum gum or guar gum? Thanks for your hlep.

Thanks for your great question. They actually do still turn out WITHOUT xanthan or guar gum. The egg works as the binder in this recipe. You'll notice most pancakes and waffle recipes don't require xanthan or guar gum but when making yeast or quick breads they need extra binding power so that's where I use the gums. ;)

I am glad I asked, because I usually substitute something for the eggs, since my little guy can't handle them yet. And I am kinda afraid to test them, since my brother and mom-in- law both have allergic reactions to eggs. If I use a little xanthum gum in addition to more apple sauce and a little oil, do you think that is fine? Thanks. It's going to be different for each recipe but you could try that and see if it works for this one. Do you know if your son is allergic to egg whites? They are dramatically less allergenic than the egg yolk so sometimes people have been able to sub 2 egg whites for every whole egg in my recipes. For pancakes and waffles you can typically sub 1 Tbsp ground flaxseed + 3 Tbsp water to equal 1 egg or 1/4 cup banana for 1 egg. Hope that helps! Leave a Reply. |
