Gluten Free Banana Almond Pancakes
- Preheat your griddle over medium heat.
- In a blender (I use a Blendtec) or a food processor, mix the almonds and water until mostly purred. Add the rest of the ingredients: egg, vanilla, banana, coconut oil, flour, baking powder, and salt to the blender. Blend until just combined. Scrape sides if necessary.
- Pour batter onto hot griddle to form 3 or 4 inch pancakes. Brown on each side.
