Fall is one of my favorite seasons. Besides it being so beautiful- the weather change means to me pumpkins and warm soup! This next recipe combines them both! It's really simple to put together and the end result tastes amazing. Fan of pumpkin? Then I think you'll love it! Store leftovers in a covered container in the fridge for up to 3 days. Goes great over cooked rice, quinoa or beans. This would also make a great curry base to top over some steamed vegetables or cooked chicken.
Audrey was loving the small green ones this year... and Ella wasn't too sure about the whole thing... ;) She definitely didn't want to be left alone with one... Animals, not pumpkins, scare this one... But...from distance they're not as bad. ;) Last stop...Children in the Corn... It's a Cornbox...(like a sandbox but with corn instead.) Clever.
