Fall is one of my favorite seasons. Besides it being so beautiful- the weather change means to me pumpkins and warm soup! This next recipe combines them both! It's really simple to put together and the end result tastes amazing. Fan of pumpkin? Then I think you'll love it!

Thai Pumpkin Soup
Store leftovers in a covered container in the fridge for up to 3 days. Goes great over cooked rice, quinoa or beans. This would also make a great curry base to top over some steamed vegetables or cooked chicken.

But...from distance they're not as bad. ;)
Last stop...Children in the Corn... It's a Cornbox...(like a sandbox but with corn instead.) Clever.
