Is it Spanish Rice or Mexican? Who knows. According to some, Spanish Rice does not have cumin but this recipe I altered tastes so yummy with just a hint. So, if you want Spanish Rice leave out the cumin, but if you're fine with Mexican add it in! Either way, it's just plain delicious to me. ;) Mexican Rice is a recipe that has eluded me for almost a year now. Almost every single time we have tacos, I've tried a different Mexican Rice recipe. But we NEVER have been satisfied! They were always okay tasting but nothing to write home (or on a blog) about. Until now my dear friends! It seriously was almost magical tasting this rice for the first time. It tasted like victory (with a little Mexican kick). I think you're going to LOVE it. My family sure did! I altered a few things... water no broth.Tomato sauce no tomatos. Cooking time was on about 20-25 min.It tastes very good, not sticky, hard uncooked .I will certainly make again. Very easy and quick side dish to make.

Will have to try your recipe, but found a cute typo you may want to fix..it says in item 2..... Bring to a bowl then cover and simmer on low for 30 minutes"....I think you meant "BOIL" instead of "BOWL"....lol

So it all depends on your chili powder. Definitely use a mild chili powder and then decrease the amount to only 1 &1/2 tsp or 1 tsp instead of 2 tsp as the recipe calls for. The recipe "as is" is not spicy for my kids but is for my mom who used to buy extra mild salsa. Ha ha ;) hope that helps.

Thanks! Made this rice last night. Kept everything the same except I used 1 tsp of ancho chile powder. It tasted sooo good. Even the spicy haters in the house loved it. Definitely a keeper and goes great with shredded pork tacos.

This is the one! I just made it to go with my Mexican pot roast and beans. Perfect and so flavorful! Have made it with rotel, but the chicken broth and the extra seasonings put it over the top! This Texan loves it!

My husband doesn't like chunks of tomato in things, so instead of the tomatoes with chiles I added a small can of chiles and a teaspoon of tomato bouillon (you can find this in the soup or hispanic section of your grocery store), and added about half a cup of extra water. You still get the rich tomato flavor.

So yummy! I used jasmine rice because that is all I had, but it was perfect- finished closer to 20min.
