Recently, my husband and I went to visit his 5th grade teacher. I know what you're thinking...who keeps in touch with people that long?! Ha ha. Apparently my husband does. ;) Long story short, his teacher has this beautiful Pecan tree in her backyard and we walked away that day with 3 huge bags of Pecans! Oh man, good thing Pecans can freeze. Now my main task is how to use them! So, when life gives you Pecans, make Pecan Pie! Most Pecan Pies have corn syrup or flour in them, making them something we would NOT eat. Luckily, I found a great Corn Syrup free recipe online and then altered it to be Gluten Free as well. The result...yummy! The pie is slightly less sweet than the original version but it's just as tasty. Last week I introduced you to my Chocolate Coconut Ice Cream but I realize that not all of you are chocolate lovers out there. Take for example my own nephew. He actually HATES chocolate! Is that weird? Willfully hating chocolate... Seems strange to me! ha ha. If you haven't heard it before coconut milk makes THE BEST ice cream. It's so creamy and smooth. Time for a treat!!! Usually I'm a strawberry kind of gal but the other day I was craving some good ol' chocolate ice cream. Audrey has been asking me to add chocolate chips into everything lately but this time I finally agreed! If you don't have chocolate chips you can simply leave them out or try broken pieces of candy canes or some other gluten free add-in. Peanut butter & chocolate have got to be one of the best food combinations ever! Don't agree? Well, Reeses Peanut Butter Cups and Peanut Butter M&M's have made millions off the idea! You know I still remember the year (1991) that M&M's introduced the peanut butter center! It was one of the most magical days of my life...(up to that point...I was 11. Ha ha.) ;) I bought a large bag and ate almost the entire thing while at the movies...and then I got a HUGE headache. Probably from all the sugar and food coloring! So the lesson my friends, moderation! (PS- food coloring really can cause headaches and migraines among some other undesirable side affects. We avoid food coloring at ALL COSTS in our house! A couple of weeks ago I went to a family reunion to find that there was another Gluten-Free chef in the family! I was so excited! This next recipe is one of her's. I adapted it a bit to be dairy free and lowered the sugar and almond extract slightly. It's seriously SUCH A YUMMY CAKE! The ingredients are so simple too, it only uses 5! This next recipe should probably be illegal from being considered as a breakfast item. It's more like a snack...that is a yummy dessert! Whatever it is, and whenever you choose to eat it, it's amazing! The flavors of the chocolate, hazelnut, and raspberries all mixed together are HEAVENLY. And can you believe it's all gluten and dairy free! What more could you ask for? ...Maybe for me to drive to your house and make it for you? Ha ha...sorry folks, all I do is supply the recipes. You'll have to do the rest. ;)

Raspberry, Chocolate, & Hazelnut GF Crepes

Ingredients:
- my gf df crepe recipe
- my chocolate hazelnut spread recipe
- fresh raspberries
Directions:
- Add a thin layer of the chocolate hazelnut spread onto a warm crepe. Add the raspberries and roll up the crepe like a tortilla and serve. OR instead of rolling, you can add another crepe on top and cut it into wedges like a pizza. Walla! A healthy, yummy, indulging snack.
So, when I saw this recipe at my local health food store it definitely caught my eye! I've been wanting to make some carrot cake lately so it was perfect! Not only is this recipe RAW but it's GRAIN FREE, DAIRY FREE, GLUTEN FREE, and EGG FREE. It was created by a man named Russell James who actually has an entire website of raw foods!
Now, if you're anything like how I USED TO BE, as soon as I would see all these ____-free recipes I'd start thinking, "Oh, I'm not concerned about that" and then I would disregard the recipe. BUT, this recipe is seriously yummy AND it's SO healthy. Try it out and let me know what you think!
Raw Carrot Cake

Cake Ingredients:
- 2 cups raw pecans
- 1 cup soft dates
- 1/2 cup orange juice
- 1/4 cup raisins
- 3 cups finely grated carrot
- 1 tsp nutmeg
- 1 & 1/2 tsp pumpkin pie spice
- 1/2 tsp sea salt
- 1/4 tsp orange extract or 1/2 tsp orange zest
- 1/2 cup desiccated coconut
- In a food processor grind the pecans. Pour into a bowl and set aside.
- Next blend together the dates, raisins, and orange juice to make a paste. Add the rest of the ingredients: pecans, carrot, nutmeg, pumpkin pie spice, salt, orange extract, and coconut. Combine well. (You can either stir them together by hand or use your food processor. I used a food processor because I'm not a fan of big chunks.)
- Press into an 8x8 pan or 8 inch round cake pan. Place the cake into the fridge to set. Meanwhile, make your icing.

- 1 & 1/2 cup cashews
- 1/2 cup water
- 2 Tbsp coconut nectar or honey
- 2 Tbsp coconut oil
- 1 tsp gluten free vanilla extract
- 1/4 tsp salt
Icing Directions:
- Blend all the icing ingredients together in a high speed blender until smooth. Spread on the cake just before serving. (If a thicker consistency is desired, place the frosting in the fridge.) Garnish your cake with nutmeg and carrot shreds if desired.
Oh man, there's nothing like a sweet juicy pear! They seriously taste like nature's sugar to me. Crazy enough, 1 pear only has 9 grams of sugar while 1 banana has around 14 grams! You would think it was the other way around! This next recipe uses pear as the base but you could easily use apples or peaches instead. I kept the flour simple for you (for those of you that don't like to mix flours). It's simply oat flour. The taste is amazing!
Gluten Free Pear Cobbler

Filling Ingredients:
- 3 cups pears
- 3 Tbsp sugar or evaporated cane juice sugar
- 1 Tbsp cornstarch (I prefer non-GMO cornstarch)
- 1/2 Tbsp lemon juice
Cobbler Ingredients:
- 1/2 cup gluten free oat flour (or you can make your own by grinding 1/2 cup oats)
- 1 Tbsp sugar or evaporated cane juice sugar
- 3/4 tsp baking powder
- 1/2 tsp cinnamon (optional)
- 2 Tbsp butter or Earth Balance Butter Sub
- 1 egg
- 2 Tbsp milk or milk alternative
- 1/2 tsp gluten free vanilla extract or if you're brave you could try almond extract instead
- Preheat oven at 400 degrees F.
- For the cobbler, in a medium bowl stir together the oat flour, 1 Tbsp sugar, baking powder, and cinnamon (if using). Cut in the butter until the mixture looks like coarse crumbs. Set aside.
- Wash and remove the cores from your pears. (I left the skins on mine but you could remove them if you want.) Slice (about 12 slices per pear) and place in a large bowl. Add the 3 Tbsp sugar, cornstarch, and lemon juice. Stir well. Pour into a 8x8 baking dish or somewhat similar size pan.
- In a small bowl combine the egg and milk. Add to the flour mixture and stir until moistened. Using a spoon, immediately drop the topping onto the pears in small mounds.
- Bake for 20 minutes or until a toothpick in the topping comes out clean.
