I bet my family is happy...I finally have this recipe figured out! We've all been having blueberry pancakes off and on for the past month! It all paid off though because these babies are good! Fluffy, golden, and they taste amazing. They're sure to be a crowd pleaser! We've had my nephew staying with us for a little bit which is great because he's a gluten-eater normally. So that means his memories of gluten-infested foods are still fresh in his mind when he eats our gluten-free food. So far he hasn't been able to tell the difference between my gluten free cooking and "normal" recipes. He also think it's so funny that my husband critiques my food so in depth and honestly! I told him I prefer it that way because it's the only way I'll get better! And thanks to my husband these pancakes are better! Enjoy! A couple of you have been asking for more Candida Cleanse approved recipes. This great healthy breakfast idea is perfect towards the end of the cleanse as you re-introduce fruits back into your diet. Peanut Butter has been on my brain lately! I've been craving it like crazy for some reason... (I'm pregnant by the way! I'll be 20 weeks tomorrow! Woohoo!) K, back to talking about peanut butter...I've even been sneaking it into my oatmeal in the morning, making frostings out of it, and adding it to my dinners at night... weird I know! Audrey is going through a phase lately... Sweet Tooth Only! She keeps on asking for chocolate cake for breakfast. ;) Perhaps that's my bad because I still have some leftover on the counter from my birthday. Now granted she doesn't have a lot of sugar in her diet anyways, and the sugar she does have is usually from organic evaporated cane juice sugar, natural sugar or fruit. But man! ![]() Sorry I missed my post yesterday! We were tending to the care of my sweet Audrey. She has had a high fever and trouble breathing the past couple of days. We've been at my husband's brother's clinic (Dr. Jared Nielsen @ the Nielsen Clinic) keeping her on oxygen and she's doing SO much better! We've also had her on some natural supplements and homeopathics. She has made a total turn around. It's amazing what oxygen alone does for the body. I know some of you don't want to see another pumpkin until next fall but I seriously eat pumpkin delights year round! I have a super easy breakfast recipe that will sweeten up your breakfast... sweet potato hashbrowns! Maybe you have already tried them, but if not, you're in for a real treat! They are really fairly easy to do and they change up the breakfast norm (not to mention add some new nutrients to the breakfast plate such as Fiber, B6, and Potassium!) They also cook about the same amount as regular frozen hashbrowns so sometimes I will make a little bit of both. These are super tasty with a little oil and sea salt but you can also try serving them with mango salsa. YUM! Let me know what you think. Some recipes are born out of not letting things go to waste... So you know my Soft Gluten Free Roll Recipe? Well, when those rolls start to get stale (2-3 days) there's a couple of options you can do with them. You can make breadcrumbs (and then turn it into my Gluten Free Stuffing) or you could make the type of breadcrumbs you put on salads. Well, introducing a new favorite: French Toast Sticks. These are great finger foods for little ones and I found that Audrey actually eats less dip than if I poured it over the entire toast! Now if you're little one has discover the dip and lick method, that might be a different story for you... ;) A great BONUS- these babies freeze too! I simply throw them in a freezer bag and defrost them with our toaster oven when I need a quick no-hassle breakfast. You could also microwave or put them into the oven to warm them back up.
