If there's one item on Thanksgiving that I absolutely can not go without...it's STUFFING! (Well, and pumpkin pie but that's a different post now isn't it.) When you stop to think about it, stuffing is such a funny dish- dried out bread that is made wet again and mixed with seasonings. But it sure does make a great side dish to Turkey! Stuffing (or Dressing as it is sometimes called) has different variations all over the world! This next recipe is closer to a Stove Top Brand version but a lot healthier. (PS Kraft sells over 60 million boxes of Stove Top every Thanksgiving! It's about time they come out with a gluten free version don't you think!?!) So, I've been playing around with this recipe for the past month (which means my family has been stuffed with stuffing lately). I think you're going to LOVE this one! It's really simple and can be split up into 2 days if you want to do some prepping BEFORE Thanksgiving. Then on the day of, it only takes 20-25 minutes of baking. You know me, I'm always trying to find an easy way to do gluten free without mixing all these different flours. I think I stumbled upon a good combination for this next bread. 3/4 parts Brown Rice Flour and 1/4 part Quinoa Flour. Interesting combination but it totally works! The Quinoa adds a great fluffy and moist texture as well as nutrient power! The brown rice and coconut oil also bring great benefits to the bread. Overall, it might be one of the healthier gluten free pumpkin breads you'll try without messing with the traditional taste of one. I think you're going to love it! My family sure does. In fact, the other night I asked my husband if he wanted me to make some more milk so he could have some cereal. He replied yes and said, "Could you make more bread?" With a title like "Raw Oatmeal" you might be thinking to yourself "...how in the world?" But this next recipe is an excellent way to eat your morning oatmeal! All of the ingredients are simply put into the fridge the night before and walla! In the morning you have a nice tender oatmeal. I like to add flax, chia, and hemp seeds to add extra protein and nutrients as well. Gluten Free Raw Oatmeal(Gluten Free, Can be Dairy Free) Makes 1-2 servings Required overnight refridgeration Ingredients: 1/2 cup gluten free rolled oats 1 Tbsp flax seed 1 Tbsp chia seed 1 Tbsp shelled hemp seeds 1 cup milk (or milk alternative to make it Dairy Free) Directions:
It's officially the holiday season! I absolutely LOVE this time of year (between the day after Halloween and the day before New Years). There's just so much to celebrate and it's such a wonderful time of the year...especially for food! Hint from jalene:Keep this cake refrigerated right up until you cut and serve it! If not, when you cut into the cake the filling will smear into the pumpkin part making a not as pretty presentation. Learned this the hard way... :(
