I thought it was only fitting to have my little "snack-attacker" introduce this next gluten free recipe to you. She is the queen of snacks. In fact, it's the first thing she asks for when she wakes up in the morning: "Mom, mom! Can I have a snack..." She usually turns her lip down when I explain we eat breakfast for breakfast and not snacks. ;) So, in honor of her (and her gluten and dairy allergies) I wanted a good healthy snack that I wouldn't feel guilty giving her but one that also provides her with a good mix of protein and nutrients. I created this from our favorite nuts and dried fruits but feel free to adjust it to your needs. Allergic to peanuts? No problem. Simply sub them out for a different nut. If you haven't already tried it, making your own trail mix is so incredibly easy! In fact, I let my 3 year do the entire thing! She absolutely LOVES it and it helps her feel a sense of ownership so she's more likely to eat it. It's such a great and healthy trail mix. My husband and I love having it on hand for our snack-attack moments as well! You might be asking... Why make my own when I can just buy it?
So with all that said, I'll turn the time over to my little one to introduce this next recipe to you. Healthy Trail Mix

Being Gluten Free has it's challenges. Like going out to eat at any Chinese Food Resteraunt. They're all gluten-infested with their wide use of wheat based Soy Sauce. So, anytime I have a craving, it has to be quenched at home. This next recipe is a simple Cashew Chicken & Broccoli that you can throw together and it tastes fabulous! Mmmmmm! Love it. Food makes me happy. :) Gluten Free Cashew Chicken and Broccoli (Gluten Free, Dairy Free) Adapted by jalene from a Betty Crocker recipe Yields about 4 servings Ingredients:

Keep leftovers in an airtight container in the fridge. Consume within 3 days.
I'm super excited to introduce to you a new gluten free waffle recipe to you! Don't get me wrong, we certainly love our old favorite waffles for sure but this recipe offers some unique qualities. These waffles are super light and fluffy and hold together very well! They are even bendable for a great sandwich bread. Sorghum is one of the cheaper gluten free flours but it is also packed with great nutrients. It's slow to digest meaning it's low on the glycemic scale making it great for diabetics. It's high in protein and antioxidants but has a pleasantly mild taste that reminds me a little of wheat flour. I think you'll love them! ;) Enjoy. PS- If you live near a Cash & Carry they sometimes offer LARGE 25 lb bags of Sorghum Flour for around $20 bucks! It's a super good deal and a great way to save money being gluten free! Gluten Free Sorghum Waffles(Gluten Free, Can be Dairy Free, Rice Free) Adapted by jalene from a recipe by Amy Perry Ingredients:

*NOTE: To use this as sandwich bread, simply decrease the sugar to 1 Tbsp instead. This next meal is a super quick, yet satisfying, comfort food. It's a classic from my childhood turned gluten free. Growing up we served it over hot toast but now we usually do rice or quinoa. You can easily double or triple the recipe according to your own needs. Enjoy! Easy Gluten Free Chicken & Gravy(Gluten Free, Dairy Free) Created by jalene Yields about 1 & 1/2 cups Ingredients:
