So I don't know if you have seen my page that talks about food ingredients yet... Basically, the less ingredients a food has-the better for you. As a gluten-free eater you're probably a little used to looking at labels by now. I want you to take a look at this food label manufactured by Wal-Mart under the Great Value name: Is that crazy or what? I counted over 60 ingredients!!! Wow, even if you are a gluten-eater I would NOT eat this! Did you see how many times a sugar substance showed up? "High Fructose Corn Syrup, Corn Syrup... Brown Sugar, Honey, Molasses, Sugar..." I didn't know bread crumbs needed so much sweetener! Did you know that ingredients are listed in order of the quantity? So the top ingredient is the biggest amount found in that food. Did you also know companies purposely add different kinds of the same ingredient to disguise that ingredient from being the biggest amount? I bet if the sugar wasn't split up into 6 different ingredients it would be one of the top ingredients. Seriously, how many different ingredients do you have to add to make good bread crumbs? There should be more like 2: bread and crumbs. (ha ha) Anyways, I have been playing around with this next recipe for a while and finally had a break through or what I like to call "website worthy" result. It's superb tasting and very versatile. It doesn't get as crispy as a normal bread crumbs but you can use it to coat a variety of different foods and use it in recipes that call for bread crumbs. (We just used it in another recipe tonight that I'll post soon.) It's got a little bit of everything in it but, trust me, it's worth it! I can't believe I haven't posted this recipe yet. I actually forgot about it until I was talking to my mom the other day. She reminded me about it! It's one of the FIRST gluten-free recipes that I ever created! Unfortunately it's not dairy-free because of the buttermilk but a great feature is that you don't need xanthan gum or guar gum to hold it together. For some reason I never imagined that you could make your own coconut milk. I don't know why but it just never occurred to me. I guess the process seemed to hard and I was thinking in the wrong direction. Grab a coconut, hammer it open, scrape out the inside...etc. It seemed like a lot of work AND it would be, if one were to do it that way. We've been addicted to Parfaits lately at our house. They just look so cute and they are a great light summer snack. I got this adorable idea out of Parenting Magazine. I just swapped out the graham crackers for my Maple Cinnamon Granola recipe and used Dairy-Free yogurt instead. It's a great aesthetically pleasing snack that your kids will LOVE! TIP from jalene: You may need more of less ingredients according to the size of your cup. In order for the fruit to show up and not be covered by the layer of yogurt on top of it, press the fruit to the edge of the cup. Enjoy! Audrey sure did! I have posted a lot of different kinds of recipes before but this one is so easy and maybe you may not think about being gluten-free. I'll also show you how to make it dairy-free as well. It is quick and a great healthy snack for little ones or yourself!
Direction #1: Sometimes we like it just simple and lightly sprinkle some sea salt. We use Premier Pink Salt (or "Princess Salt" as we like to call it because of it's great natural pink color. It comes from somewhere by Hawaii and has great minerals in it as well!) You can get this through my husband's clinic if you are interested. Direction #2: Other times we sprinkle on Nutritional Flakes which look like this. It has kind of a nutty flavor to it and is EXTREMELY good for you! In fact, you can add it to any of your other meals that you're looking to add nutrients to. I've even seen it used in place of Parmesan cheese before in Vegan recipes. (You can get this from my husband's clinic as well.) And BAM! An easy healthy snack that is quick to fix. :)

Notes from jalene: The potatoes and the chickpeas feel/taste like the same texture to me. My husband didn't mind it but you could exchange out the chickpeas for diced cooked chicken if you're not concerned with being Vegan. Or, you could sub out the potatoes for different vegetables such as yams or even apple. If you do use apples add them when you add in the zucchini instead of with the carrots.

We don't use canned soup anymore in our home because most have the ingredient MSG. My husband is very allergic (it causes him extreme headaches!) MSG in general is good to avoid at all costs. Did you know you can make your own Soy Milk?! It is SO easy and saves you A LOT of money. Plus, you can make it Organic and non-GMO so it's even healthier for you than the regular Soy Milk on the shelf. This recipe below will fill a 4 cup mason jar just like my Rice Milk recipe.
