Before we begin...there's something you should know. I have a hard time keeping things totally normal when I make food. I'm always experimenting and throwing in things to make it healthier. So this next recipe is one that could be made normal or tweeked a little bit like I have done (*see note). Either way, it's a tasty Gluten-Free, Dairy-Free version of a classic. Note from jalene:Okay, if the quinoa is freaking you out you can simply leave it out and just double the meat to 1 lb. (We just try to eat less meat in our house and more grains so this meal is a great way to sneak in some without affecting the taste too much at all.)

Before going Gluten Free we used to practically live at this restaurant! But their Gluten Free menu is a little disappointing. Not even the blacks beans are on the "safe" list. So, if there's any of you out there (like me) that miss their salads, this next recipe is for you. Ps- Unlike other Cafe Rio copy cat recipes I use chicken not cooked in a liter of Coke. ;) I feel it's healthier. Give this one a try! To assemble: Place a tostada or a heated corn tortilla on your plate, then rice, beans, lettuce, and chicken. Top with Cilantro dressing. A slice of lime and guacamole are also delicious with this salad. Sometimes I will take half of another tostada, crunch it, and blow it on top of my salad like Nacho Libre. (ha ha) Just kidding. Sometimes a good Gluten-Free, Dairy-Free recipe doesn't have to be one that calls for a wheat or dairy substitute. If you're new to being Gluten-Free look around for things that you CAN eat. You'll find there's a lot more options out there than you realized! (Needless to say it will also help your emotional health as you focus on what you can eat and not what you can't. This chicken recipe is so yummy! It was love at first bite for me and has become one of the recipes I make often. It's so versatile too. You can keep it whole and serve it with rice or potatoes or you can double the sauce and shred it and serve over salad. It has a hint of hot sauce that helps enhance the flavor but not too much to be called hot. Of course you can always add more if you want it hotter. :) enjoy! PS- I served mine with 1/2 white rice and 1/2 quinoa and green beans. Quinoa is a great source of protein, dietary fiber, phosphorus, magnesium, and iron. It's also naturally gluten-free and easy to digest. It's so more nutritious than white rice so I often do a half n half combo when serving white rice. It cooks the same amount of time as white rice so you can throw them in the rice cooker together. If you wash Quinoa really well before you cook it, it will blend in with the taste of the rice. Sneak it in your next batch of white rice! Here's sweet Audrey enjoying her's. I don't know about where you live but today it's so cold and rainy! What better way to warm up than with a yummy soup. I have mastered this one Gluten-Free but it's not quite yet Dairy-Free. There are some suggestions at the bottom of the recipe on how to alter it but it will change the taste slightly. Alterations: *You can use a variety of other veggies instead of the ones listed. Potatoes, celery, or broccoli would also work well in this soup. *To make Dairy-Free you can add a can of coconut milk instead of the evaporated milk and leave out both the cheeses or sub Vegan Chedder Cheese for the Chedder and sub Nutrition Flakes for the Parmesan Cheese. This will change the taste slightly but will still be good. |
What's a Tomatillo?Tomatillos are actually a FRUIT that belongs to the same family as the tomato. It looks like a small green tomato with a papery husk. It's flavor is tart and is used in dishes such as guacamole, salsa verde, and green sauces. When purchasing, look for tomatillos with a fresh and green husk. Ingredients:
- 1 Tbsp of the Gluten-Free Hidden Valley Ranch Packet Equivalent
- 1 cup mayo (be sure it is gluten-free) or Vegenaise
- 1 cup milk
- Combine all the ingredients into a food processor or blender. Combine until smooth.

Ingredients:
- 4 cups chicken broth (make sure label says GF)
- 1 cup water
- 1 organic apple (cut into cubes)
- 2 large carrots (sliced)
- 1 cup tomatoes (diced and with juices)
- 2 stalks organic celery *see note
- 1/3 cup rice (I used brown but I did have to increase the cooking time slightly)
- 1/4 cup onion (chopped)
- 1/4 cup raisins (optional)
- 1 tsp dried or 1 Tbsp fresh parsley
- 1 to 1 1/2 tsp curry powder
- 1 tsp lemon juice
- 1/4 tsp pepper
- 1/8 tsp ground nutmeg
- 1 1/2 cups cooked chopped chicken (optional)
Directions:
- In a large pot combine the everything except for the chicken (if you decide to add it).
- Bring everything to a boil and reduce the heat. Cover and simmer around 20 minutes (or until your rice is tender). Stir in chicken and heat through.
*Note:
Just like apples, celery show up on the "Dirty Dozen" list of fruits and vegetables that are highly contaminated by pesticide residue. So if you're going to buy anything organic, celery should be at the top of that list along with apples.
