Of course, even if you're not on a cleanse, this omelette is a perfect breakfast treat! It's an unlikely combination for sure but I think you'll be pleasantly surprised with how good it really is! Let me know what you think!

Serves 1-2 people
- 2 eggs
- 1 apple, peeled, cored & grated
- coconut oil
- 1/2 tsp cinnamon (optional, omit if on cleanse)
- Preheat a round 8" pan over medium heat. Grease the pan with coconut oil.
- In a small bowl beat the 2 eggs together. Add the grated apple and stir until well combined. Pour the mixture into the preheated pan and spread it out to the sides of the pan. Brown on each side. Serve warm.
